Hey there moms/moms to be! So I would first like to chat about how when you’re saving for parenting (or just in general), you need to watch how often you eat out, get takeout, and hit the grocery store. That being said, I tried to make dinner based on whatever I had in my pantry. I am also trying to make sure I am eating healthy, natural foods with protein. Which brought on Butternut Squash Soup, made from Trader Joes stock, black beans, carrots, apples, celery, garlic, and coconut milk. As delicious as that all may have sounded…sadly that wasn’t so much the case.

I also topped it with some pumpkin seeds for a little crunch and served it with some brown rice. This recipe has a lot of Vitamin A from the veggies, healthy fats from the coconut milk, and protein from the beans, so health wise it was great! But the broth was lacking in flavor. Any ideas on how to revive Butternut Squash soup???
